Uncle Randeaux Fried Fish
Cajun Style Fried Fish
Ingredients

1/2 cup of cornmeal (if frying a lot of fish, use equal amounts of Cormeal and flour)

1/2 cup of unbleached flour

1/4 tsp. of salt

1/4 tsp of black pepper

1/4 tsp of cayenne (red) pepper

1 egg

milk to pour in a bowl (1/2 deep)

1 tablespoon of vinegar

fish

vegetable or corn oil

Directions

On a flat board or in a very large platter, mix the four, cornmeal, salt, and pepper

In a bowl pour mix to about 1/2 way, stir and egg and vinegar

cut the fish int steaks as seen in the video

put the fish into the liquid

after a few minutes, cover the fish with the cornmean/four mixture

When the oil is not in a skillet about 1/2 full, start to add the fish

Turn over when the bottom is a nice brown (see video)

When the opposite side is done, take it out

Do not over cook the fish
