A delicious traditional Cajun food. It is different that what you may have eaten in New Orleans. Cher, dis is Cajun, I told you for sure!
cooking oil (just enough to cover the pot)
1 large onion
1 large bell pepper
4-6 cloves of garlic
1 bunch of scallions
Filé
hot sause made of the tabasco pepper
salt (to taste)
pepper (to taste)
chicken (the size of your pot will determine how much)
1 pound of sausage
4 slices of smoked ham
chicken broth

rice (see vido-https://www.youtube.com/watch?v=tF1WeGU1cl8&t=2s)
chop and then sauté the garlic, onions, bell pepper--I like to add my salt and pepper
Chop the scallions and save for later
After garlic mix is sautéd, and the chicken broth and water
when that comes to a boil, add 3 tablespoons of roux)
add now about a tablespoon of filé
let that boil for 3-5 minuntes and add a few shakes of the sause from tabasco.
let that boil for 3-5 minutes
add the meat-cook for about 20 minutes (make sure the meat is cooked)
add the Filé and scallions
let the dish settle for a few minutes.
Put rice in a bowl and pour the gumbo over it
