Ingredients
- 2-3 Scallions
- 3-4 cloves of garlic (To taste, but do not go light on the garlic if you want Cajun flavor!)
- 1 bunch of cilantro- may opt. out, but cilantro is the Uncle Randeaux flavor.
- 3 cans of 14.5 oz diced tomatoes--or fresh 2 Jalapeño Peppers--use your judgement on this. Jalapeño peppers are very unpredictable when it comes to heat You can buy one that is so hot you cannot eat it, and another that has no fire at all.
WARNING! Add one pepper or even 1/2 at a time. Once you put the fire in the salsa, you cannot take it out. You can add all the tomatoes you want. The heat will stay the same or more. And it will even be hotter tomorrow!
Directions
- Cut the scallions into small pieces
- Chop the garlic.
- Cut the Jalaleño peppers into small pieces.
- Put in the tomatoes into a large bowl.
- Add all the other ingredients. Stir. Let it sit for a while, at least an hour, but it may be eaten immediately.
- Serve with chips.
