Good in gumbo and as a side dish for pretty much everything!
1 pound Okra--the okra will cook down.
1 large onion
1 bell pepper
5-6 cloves of gar;ic
dash of cayenne (red) pepper
dash of black pepper
cooking oil (I prefer olive oil, but any will do)
1 can of diced tomotoes, or a couple of large fresh tomatoes
sprinkle of Kosher sea salt
Cut the okra-about 1/2 pieces (does not need to be exact, it will cook down)
Cover the bottom of the pan with oil
Put the okra in the pot with a low to medium fire
Stir the okra. Do not let it burn. This will take about a total of one hour to cook. Watch the video on YouTube
While your okra is cooking sauté your garlic, onion, bell pepper i olive oil. Add a dash of red and black pepper.
Do not let the okra get dry. You may need to add a little water from time to time.
After about 45 minutes, you will see the slime reduced, put it is not completely gone. Add a little salt. Just a sprinkle.
Spoon in the tomato--as you do this the slime will reduce more and more.
Add the sautéd garlic, onion, and bell pepper.
Continue to stir.
It will take about one hour for the slime to disappear completely. (watch video to see when completed)
Serve with your meal. Add to gumbo.
This freezes very well.
