Homemade mayonaisse


Perfect for anything with mayonnaise

Great on fried potatoes

Potato Salad



1 clove of garlic

sprinkle of salt

1 cup of vegetable oil (corn is good)

1 boiled egg yolk

1 raw egg yolk



Put salt on the clove of garlic and crush

In a 2 cup or more measuring cup, put the raw egg yolk, boiled egg yolk, and crushed garlic


Gradually add the oil while stirring.  Only a few drops at a time.  If you put too much at a time, the oil and egg will separate.

When you have about 3/4 of the oil mixed in, add a table spoon of vinegar.

Stir continuously.  If you see the mixture start to separate, stir faster.   Adding a few drops of vinegar will sometimes bring it back together.

Continue with the oil until the cup is empty.

Add more vinegar, 2 to 3 tablespoons.  It will bleach it a liittle white, but not as much as store bought mayonnaise.
