This is the favorite meal of many Cajuns. See the video to know how to break off the tail and peel off the first scale for easy access and eating!
10 lbs of crawfish ( or more)
4 lbs of sausage (or more)
2 or 3 large onions
1 bunch of scallions (or more)
1 or 2 heads of garlic
2 or 3 bell peppers
corn on the cob (if fresh)
red (Cayenne) pepper
black pepper
crawfish boil package (optional)
A great big pot!
Cut the vegetables
Cut the sausage into 4 inch pieces
Fill the pot about 1/2 full of water
As water is about to boil add the vegetables and sausage
Let this boil until the veggies and sausage is cooked
Add the crawfish when the water is at a strong boil
The cold crawfish will stop the boiling for a minute or two.
The crawfish is all done when the are all red. (see video)
Do not over cook. About ten minutes is good. It will be tough if you cook too long.
Scoop out the food and eat!
