Jalapeño Poppers
Perfect for parties and TV bingeing. Or you just want a tasty snack!
Ingredients

1 Large yellow onion
4-5 Cloves of garlic (To taste, but do not go light on the garlic
if you want Cajun flavor!)
1 Green Bell Pepper
1 lb. Ground Meat-preferably 96% non-fat
6 Jalapeño Peppers (or more-depending on how many poppers you wish to serve)
1/4 tps. Black Pepper (or to taste)
1/4 tps. Cayenne Pepper (or to taste)
1/2 cup Grated sharp cheddar cheese.

Directions

Preheat the oven to 365 degrees.
Chop the onions, garlic and bell pepper into small pieces.
Cook the onion, garlic, bell pepper, and ground meat until soft in a cast iron skillet.
Cut the jalapeño peppers in half. (wear gloves in case the peppers are hot!)
Remove the seeds.
Put the peppers on a cookie sheet with parchment paper or foil to cover the bottom of the medal sheet.
Fill the peppers with the cooked ground meat mixture.
Sprinkle the grated cheese over the peppers.
Bake for 40 minutes.
