Red Bliss Potatoes smothered in onions and garlic
This is good as any side dish or can be used as home fries at breakfast. Everyone will love it!
Ingredients
Red Bliss Potatoes (or any potato you like-me, I like da red)
1 large onion
3-6 cloves of garlis
1 bunch of green tops (Scallions)
1 bell Pepper
a couple of shakes of cayanne pepper (not too much. The amount of potatoes and your heat tollerance determins how much pepper to use)
a couple of shakes of black pepper (refer to the above about pepper)
a very little amount of kosher sea salt. Again, to taste but not too much.
olive oil or any kind of cooking oil
Directions
Slice the potatoes to about 1/4 inch thick each
cut garlic, onion, scallions, and bell pepper
Cover bottom of the pot in oil. medium heat--not too hot or you'll burn the potatoes
Throw in the garlic, onion, scallions, and bell pepper
Throw in the potatoes
Add salt and pepper to taste
Put a lid on it
Stir from time to time with a wooden spoon
Do not let it sit too long without doing that or the bottom potatoes will burn and the top uncooked
To test when done, take a knife and if it goes through the potato, it is done
Turn off fire, let it sit a bit.
