Uncle Randeaux's Fried New Potatoes
Deep Fried stuffed little potatoes

Great as a side dish with anything.  Great for vegetarians and carnivores.

Ingredients

New potatoes--whatever amount you want

1 onoion-chopped

4-5 cloves of garlic- chopped

1 bunch of scallions-chopped

a dash of salt--not too much

1/4 teaspoon of black pepper

1/4 teaspoon (or less) of cayanne pepper--careful.  This can get hot without very much of the red pepper

and old fashion potatoes skin peele--see video

cooking oil-fill the pan no more than 1/2 way full

Directions

stir the chopped onions, garlic, and scallions and put them in a bowl and add salt and pepper

after cleaning the new potatoes, take the potato peeler and dig a hole in each one--see video

stuff the garlic and onion mixture into the holes in the potatoes

When the oil is hot, put in the potatoes

They potatoes are done when you can stick a knife and they go all they way through.
