A great side dish with anything. Good for vegetarians if you use only oil.
1 to 2 cups of butter beans
1 onion
4-5 cloves of garlic
4-5 scallions
1 bell pepper
salt and cayenne and black pepper to taste
oil or bacon grease.
Chop the onions, scallions, garlic, and bell pepper.
Put the oil and/or bacon grease into a pot. Turn to a medium heat.
Sauté the onions, scallions, garlic, and bell pepper
After the are starting to get wilted, add the butter beans, salt and pepper.
You will need to add a little water, but do not drown them. We want smothered butter beans, not boiled.
When the beans are done (I do not like mine mushy, but tender), turn off the fire and let it set for a few minutes.
