Uncle Randeaux's Moque Choux
Fresh corn off the cob

Excellent side dish that goes with everything.  Great to add in a soup!  Stores in the freeze for years.  Enjoy!  A Cajun delight.

Ingredients

Fresh Corn on the cob (1 dozen)

1 large onion

1 large bell pepper

5-6 cloves of garlic (or to taste)

2 large fresh tomatoes

1/4 teaspoon or less of black pepper

1/4 teaspoon or less of black pepper

1/4 teaspoon or less of kosher sea salt

olive or any type of cooking oil

 

Directions

Cut the corn off the cob(see video)-

put in a bowl and set aside

cover the bottom of your pot with oil (not too much)

chop the onions, garlic, and bell pepper and put in the pot on a medium fire

as the above is cooking add the corn

dice the tomatoes and add to the pot

cook until all is sautéed together

do not over cook until mush.  (See video)

serve hot or freeze in containers in for later
